Ok Look! Now you know Chef Hart loves the Pasta! So you will no longer need to buy store pasta. If I catch you buying pasta from he store again. I will find you! So lets do this! You wanna break out a dish for date night then this is it!. Lets bring it home and bring it in to make this dish amazing and blow some socks off or maybe some pants wink wink*. Lets make this creamy alfredo into a dreamy reality.
How to make it
Step 1.
Step 2.
Step 3.
Step 4.
Step 5.
Ok So now its time for fresh pasta. Lets get started with the pasta and put our 2 cups of all purpose and make a well. In the inside add your 4 room temperature, add your salt and olive oil. Begin to whisk the eggs together and slowly add your flour and whisk together.
Once everything is incorporated begin to knead the dough, don't be afraid of the dough it may be a bit crumbly but continue kneading for 10-12 minutes until dough has been formed. ( if your dough is to dry add a little bit of water) once your dough is formed wrap it up tiet and place it inside the fridge for 15 mins.
As our dough is in the fridge were going to begin on our sauce. So for this creamy sauce your going to begin it by adding some garlic and chili flakes and begin to let them sweat. Once they are aromatic and sweating add your butter, once your butter is melted add in your heavy cream and begin to whisk it together. As its your whisking add your salt and pepper, lemon juice, fresh nutmeg, lemon juice and zest, until it comes to a simmer. Once its come to a simmer add in your parmesan cheese until it becomes thick to your consistency.
Once your sauce is finished turn off the heat and set it to the side. Grab your dough out of the fridge and cut it into fours. Once its cute into fours grab your roller and roll your piece out . Once its rolled you can begin by putting it through the pasta machine. (if you don't have a pasta roller or machine then that is ok you can use your knife, just make sure you roll it out to the thinnest way possible and cut precisely.
Once your noodles are cut and your water is boiling drop the noodles into the boiling water and they should be finished in 2-3 minutes. once finished add into the sauce and begin to mix them all together. Once mixed thoroughly chop up some fresh parsley and add as garnish and serve to your date.
