Potato Leek Soup

Ingredients: ​

  •  1 Bunch of Leeks

  •  3 Peeled Potatoes

  • 1 Onion

  • 1 Bunch of Celery

  • 1 Bay Leaf

  •  1 Cup of Chicken Stock

  •  Salt and Pepper to Taste

  •  1 Loaf of Sourdough

  •  1 1bsp of Butter

Ok so its cold outside, the wind is blowing and your freezing but you want something hearty and warm. So why not lets get this cracking with a soup! But not just any soup but a Potato Leek Soup. This is so flavorful and will make your snowy night into an amazing flavorful experience! Make it a date night or a family event that you guys can do together! Enough talking lets get down to business.

How to  make it

So lets start with potatoes and our veggies. We are going to peel and cut our potatoes , leeks and our onions. (Make sure that you wash your leeks because they harbor a lot of dirt.) Once everything is diced lets get a nice Sautee pan and put it on medium high heat and add our potatoes and veggies inside. Cook your veggies until soft. (don't forget to season your veggies with salt and pepper)

.While waiting for your veggies to get soft. add your bay leaf, and your chicken stock. Let it cook till it comes to a nice simmer or until your potatoes are soft. (Make sure you taste as you go!) 

When your everything is cooked down and soft, let it cool down and once its cool add it into your blender and blend until its smooth! Once Finished add it onto a pot and let it come to a nice simmer. (Optional, add your heavy cream for a creamy smooth texture) 

Once you have added everything and your soup is set aside. Slice up your sourdough. and add butter into a pot. add your bread in and let it cook until it has a nice crunch . Once finished Pour your soup into a bowl and add your croutons and top with a dollop of sour cream if you choose and viola there you are.
